Time To Shop In Our Pantries! Raw Apple Cake Recipe

Hi friends and welcome! 
It's a very different world we are living in than ever before, isn't it? Thankfully, and hopefully, it won't be forever.
Well, have you done your Spring cleaning?  Maybe even twice?  I think that we have all done more around our house this Spring and then ever before. Spring cleaning can get a little dull and, for me personally, even run out! So what's next?  Well, since you're home anyway, why not try your hand at cooking and baking. I mean, you do have the time like never before.  And, there's actually a truly practical reason to learn now! If you're heeding the advice of our officials, you are staying home, as am I. 

After having a very different morning today. Starting with a live Zoom conference on autoimmune diseases and COVID-19. Now there’s a sentence I didn’t think I’d ever write. Even so, I am so very grateful for technology, more now than ever.  Grateful the info wasn’t as alarming as I had thought. At least no more so than the average person in the world today.  I must admit,
I have had my share of anxiety and concern over this current pandemic, that we are all learning to deal with. But, truly, my help (and sanity) comes from the Lord... 
I have never lived that in the truth more than I am now.

That brings me to my reason for sharing today. Isn’t it about time we all started shopping in our own pantry (less time out, and exposed, the better, right?) 
And, truly if we are the average American and we have plenty on hand to live with.


(I thought you might enjoy seeing my Mother's beautiful, albeit worn, recipe card.) 
So, today I am sharing one of my favorite recipes of my Mum’s (actually from her church Ladie's Guild, from so many decades back that we can no longer find it, or I would give proper credit where due) 
At any rate, the recipe remains wonderfully used and enjoyed in our home. And, it comes right from your pantry. Almost everything in this recipe should be a staple in most people's homes.  Not only that! It is made in one bowl, no mixer needed and baked in one pan.  Win-win! 

The taste is simply divine! And if made per the recipe, it should make at least 12 good portions, perfect for a family dessert on one night,  many breakfasts, and enough to freeze for another time.
Okay, I know, enough talk and on with the recipe! 

This recipe is very versatile and forgiving, so it's great for beginner cooks! I know it says 4 cups of chopped apples, but I have made this cake with 2 cups and 5 cups! It literally is very easy. add whatever favorites you like! Raisins, cranberries, etc...

I always love to share pictures of the steps, just so you know you are doing it right and to answer the question, "should it look like this?!" that inevitably comes up.
So, literally one bowl. Ingredients in. Stir with a fork first, then switch to a spatula. This is a thick batter.
Once combined, pour into a lightly greased 9x13 pan. Bake @ 375 F for 40-50 minutes and enjoy! 
Congratulations! You have created cake!! 
This is such an easy and yummy recipe, I do hope you'll try it and shop a little more from your pantries so you can stay safe and keep me safe in return. I promise I'll do the same.

    1. Yes, Dee, it was. I just lucked into the invitation. My diagnosing doc from UCSF was one of the 3 National speakers and specializes in rheumatology, Sjogren's, ankylosing spondylitis to name a few. The info was good for us! No more occurrences than any other group. Thank Goodness! Practice all safety managers as usual handwashing being at the top of the list really. If you’re on prednisone talk to your doctor. Thank you so much for the party invites, I was so glad to be able to participate this week.

  2. This cake looks wonderful, and I have all of the ingredients to make it right now! I love that the amount of apples can be adjusted. I love your moms' recipe card too--I have all of my mom's recipe cards, and I treasure them. Also, it's good to know that those with autoimmune illnesses aren't more affected by COVID-19. (I have Sjogren's and Hashimoto's.)
