Raisin Bran Muffins (Six Week Muffins) Yes! I Said Six Weeks!

Hi friends ! I’m popping back in, quickly, between gardening and baking duties to share one of my family’s favorite recipes. I know, back again so soon? I’ve actually been trying to get this recipe up for awhile but really wanted to finish it up for you now, because this is the perfect weather for these muffins. 

This is an adaptation of a recipe from my Mother’s church Ladies guild!  They all got together, about 40 years ago and put together a fundraising cookbook of their favorite, tried and true recipes. Isn’t that awesome?!  Big win all the way around

They couldn’t be easier or more delicious. The best part, you can make your batter, make as many as you like and stash the rest of the batter in the back of your fridge and pull it out again when you want some more fresh muffins! Oddly, they actually seem to taste better the second and third time you bake them! 

I love these liners, they let you make a little larger muffin than a standard cupcake, making them a great breakfast. 

I hope you enjoy them as much as we do  

So, here it is! In a large bowl combine: 

3 cups sugar

5 cups flour

5 tsp. baking soda

2 tsp. salt

Empty an entire box(15-16oz) of Raisin Bran cereal into your largest bowl, we’re talking really large, 

and pour the flour, and sugar mixture over your cereal. Lightly toss together with a large spatula. Then; 

In a separate bowl combine:

4 eggs beaten

1 qt. buttermilk

1/2 cup melted butter, combined with 1/2 cup oil

Pour it over your dry ingredients and mix, til just combined. 

No mixer here, just a good old fashioned wooden spoon or spatula. If you love raisins as much as I do, you can add 1 more cup here. 

Spoon two heaping Tablespoons of batter into each paper cup 

Crazy easy, right?! 

400 degrees Fahrenheit for 16-24 minutes (I use a gas oven, and mine took 23-1/2 minutes, my electric oven, fully preheated was done in 22 minutes) It matters, because these muffins are large and can sink in the middle if not fully baked.
